Métodos IPER en seguridad y salud ocupacional en cosecha y poscosecha de una empresa agroindustrial de espárrago verde fresco

Abstract
El presente trabajo de investigación no experimental se desarrolló entre los años 2014 y 2015 en una empresa productora y comercializadora de espárragos verde fresco, la cual cuenta con dos instalaciones productivas; la primera ubicada en el departamento de Ancash, donde se realiza el proceso de cosecha del espárrago verde y la segunda instalación ubicada en distrito de Carmen de La Legua, provincia del Callao, donde se realiza el proceso de poscosecha. El objetivo de este trabajo fue probar la metodología IPER (identificación de peligros y evaluación de riesgos) en la evaluación de seguridad y salud en el trabajo, de las actividades realizadas durante los procesos de cosecha y poscosecha de espárrago verde fresco, para ello se identificaron las actividades peligrosas que se realizan durante los procesos de cosecha y poscosecha, luego se evaluaron los riesgos que generan las actividades peligrosas identificadas, a continuación se calificaron las actividades peligrosas que generaron más riesgos a la salud y seguridad del personal y finalmente se recomendó propuestas de mitigación de los riesgos que causen daños más significativos a la salud y seguridad del personal. De los resultados obtenidos se identificaron 15 peligros con mayor riesgo a salud y seguridad del personal, 7 en el proceso de cosecha y 8 en el proceso de poscosecha, para los cuales se realizaron las recomendaciones respectivas con el fin de mitigar los riesgos a la salud y seguridad del personal.
This work no experimental research was conducted between 2014 and 2015 in a producer and marketer of fresh green asparagus company, which has two production facilities; the first located in the department of Ancash, where the harvesting process green asparagus and the second facility located in district of Carmen de La Legua province of Callao, where the post-harvest process is done is done. The aim of this study was to test the IPER methodology (hazard identification and risk assessment) in the evaluation of safety and health at work, the activities during the harvesting and post-harvest of fresh green asparagus, for it were identified dangerous activities performed during the harvesting and postharvest, then the risks that generate hazardous activities identified below hazardous activities that generated more risks to the health and safety of staff and finally proposals recommended were graded evaluated risk mitigation to cause more significant health and safety of personnel injury. From the results obtained 15 dangers increased risk to health and safety of personnel, 7 in the harvesting process and 8 were identified in the process of post-harvest, for which the respective recommendations were made in order to mitigate risks to health and safety.
