Abstract
El presente trabajo tuvo como objetivo, describir el sistema de producción de forraje verde hidropónico (FVH) de trigo para la elaboración de un Superfood Mundial denominado “Wheatgrass”. Se presenta una descripción de la elaboración de la materia prima a partir de las plantas de trigo en estado de crecimiento temprano, presentando alto contenido de proteínas, carbohidratos y un bajo contenido de fibra. Se describe también todo el proceso desde la implementación de los invernaderos y la obtención de las semillas de calidad, hasta la cosecha, estrujado y el envasado del wheatgrass. En la cosecha se realiza el corte de las hojas del FVH, luego son lavadas, usando dióxido de cloro y ozono, por lo que se le puede considerar orgánico. También se realizaron modificaciones en las maquinarias para una mejor optimización del proceso de estrujado. Estas mejoras se realizaron para obtener un producto de nivel industrial, que involucre un menor costo y a mayor escala y así pueda ser consumido por más personas.
The objective of this work was to describe the production system of hydroponic green fodder (FVH) of wheat for the elaboration of a World Superfood called "Wheatgrass". A description of the elaboration of the raw material is presented from wheat plants in an early growth state, presenting a high content of proteins, carbohydrates, and low fiber content. The entire process is also described from the implementation of the greenhouses and the obtaining of quality seeds to the harvest, crushing, and packaging of the wheatgrass. During the harvest, the FVH leaves are cut, then they are washed, using chlorine dioxide and ozone, so it can be considered organic. Modifications were also made to the machinery for better optimization of the squeezing process. These improvements were made to obtain an industrial-level product, which involves a lower cost and on a larger scale and thus can be consumed by more people.
