Abstract
El presente Trabajo de Suficiencia Profesional se realizó en el centro de faenado de porcinos “INPELSA” con el propósito de identificar los aspectos deficitarios en el faenado de cerdos; y con ello implementar un Manual de Buenas Prácticas de Manufactura (BPM) como propuesta de mejora y cumplir con las actuales exigencias sanitarias. El trabajo se inició recopilando información a través de la revisión de documentos, visitas a la planta de faenado y aplicación de la Lista de Verificación. Dicha lista fue elaborada considerando los requisitos de la Norma Sanitaria basado en D.S. 004-2011-AG SENASA. Una vez analizada la información se realizó el diagnóstico, en el que se encontró que el centro de faenado cumplía con el 56.3 % de los requisitos obteniendo una calificación de Regular, es decir, presenta requerimiento de mejoras sanitarias. De los 47 aspectos evaluados, 3 aspectos (instalaciones, personal y control de procesos) calificaron como regular y dos aspectos (control de contaminación cruzada y gestión de la inocuidad) calificaron como deficiente, por ello se debían realizar mejoras y acciones correctivas inmediatas. Luego mediante la tormenta de ideas y la matriz de selección de problemas se identificaron los aspectos deficitarios y problemas principales. A partir de ello se seleccionaron tres problemas importantes: “Falta de capacitación al personal en tema de riesgos para la inocuidad y Buenas prácticas de manufactura”, “Ausencia de registros y procedimientos relacionados a la calidad” e “Incumplimientos de requisitos de higiene y saneamiento en planta” y se generaron las siguientes propuestas de mejora: Elaboración de un Manual de Buenas Prácticas de Manufactura para faenado de porcinos y elaboración de protocolos en el proceso de faenado de cerdos. Luego de la implementación se aplicó la lista de verificación y se obtuvo 92% de cumplimento logrando un calificativo de muy bueno, que significa que el centro de faenado posee buenas condiciones sanitarias.
This Professional Proficiency Work was carried out at the “INPELSA” pig slaughter center with the purpose of identifying the deficient aspects in pig slaughter; and with this implement a Good Manufacturing Practices Manual (GMP) as a proposal for improvement and comply with current health requirements. The work began by collecting information through the review of documents, visits to the slaughter plant and application of the Checklist. This list was prepared considering the requirements of the Health Standard based on S.D. 004-2011- AG SENASA. Once the information was analyzed, the diagnosis was made, in which it was found that the slaughter center met 56.3% of the requirements, obtaining a rating of Regular, that is, it presents a requirement for sanitary improvements. Of the 47 aspects evaluated, 3 aspects (facilities, personnel and process control) were classified as regular, and two aspects (cross contamination control and safety management) were classified as deficient, therefore improvements and immediate corrective actions had to be made. Then, through brainstorming and the problem selection matrix, the deficient aspects and main problems were identified. From this, three important problems were selected: "Lack of training for personnel on safety risks and Good Manufacturing Practices", "Absence of records and procedures related to quality" and "Non-compliance with hygiene and sanitation requirements in the plant" and the following improvement proposals were generated: Preparation of a Manual of Good Manufacturing Practices for pig slaughter and development of protocols in the pig slaughter process.
