Abstract
La seguridad alimentaria es actualmente una de las principales prioridades del gobierno, distribuidores, cadenas de supermercados y consumidores en general. El gobierno ha fortalecido los mecanismos de supervisión de la inocuidad de los productos frescos y han aplicado sanciones más severas que pueden incluso derivar en multas y procesamientos, por ejemplo, los Estados Unidos de América (Lieberman, 2014). En los últimos 20 años se ha observado un aumento de las políticas de seguridad alimentaria en los distribuidores y minoristas de productos agrícolas. Los minoristas de productos agrícolas más relevantes han incluido requisitos obligatorios de certificación de terceros en estándares de seguridad alimentaria como GlobalG.A.P., PrimusGFS, SQF (Safety Quality Food), BRC (British Retail Council), entre otros. Este requisito se ha extendido a todos sus proveedores y distribuidores de frutas y hortalizas; Esto sin duda ha creado un mercado interesante para empresas dedicadas al campo de las certificaciones agrícolas y agrónomos que puedan dedicarse a verificar el cumplimiento de las reglas impuestas por gobiernos o entidades privadas. El principal objetivo de la seguridad alimentaria es garantizar un producto seguro para los consumidores. Existen varios patógenos que causan enfermedades dietéticas en los humanos; diversas enfermedades pueden provocar graves complicaciones de salud y reducir la esperanza de vida de las poblaciones. Este trabajo tiene como objetivo generar conciencia sobre la inocuidad de frutas y hortalizas entre productores, exportadores y empresas que manipulan frutas y hortalizas. Además, brindar soluciones para el uso de agentes sanitizantes que reducirán el riesgo de contaminación microbiana en frutas y verduras.
Food safety is currently one of the top priorities of governments, distributors, supermarket chains and consumers in general. My governments have strengthened the mechanisms for supervising the safety of fresh products and have applied more severe sanctions that can even lead to fines and prosecutions, for instance, the United States of America (Lieberman, 2014). In the last 20 years, an increase in food safety policies has been observed in distributors and produce retailers. The most relevant produce retailers have included mandatory requirements for third-party certification in food safety standards such as GlobalG.A.P., PrimusGFS, SQF (Safety Quality Food), BRC (British Retail Council), among others. This requirement has been extended to all its fruit and vegetable suppliers and distributors; This has undoubtedly created an interesting market for companies dedicated to the field of agricultural certifications and agronomists who can dedicate themselves to verify compliance with the rules imposed by governments or private entities. The main objective of food safety is to ensure a safe product for consumers. There are various pathogens that causes dietary diseases in humans; various diseases can lead to serious health complications and reduce the life expectancy in the populations. This work aims to raise awareness about the safety of fruits and vegetables among producers, exporters and companies that handle fruits and vegetables. In addition, provide solutions for the use of sanitizing agents that will reduce the risk of microbial contamination in fruits and vegetables.
