Manual de gestión de la inocuidad FSSC 22000 para quinua (Chenopodium quinoa Willd.) envasada en Agro Exportadora Andina S.A.C.

Abstract
El presente trabajo ha sido desarrollado en la empresa Agro Exportadora Andina S.A.C.,ubicada en el distrito de Surco, Lima, la cual está dedicada al rubro de cereales y semillas andinas. Este trabajo tuvo como finalidad principal mejorar y reforzar las condiciones de inocuidad bajo las cuales se viene desarrollando el proceso productivo de la organización, y de esta manera también atender a las exigencias de sus clientes. Este resultado se obtuvomediante la propuesta de elaboración de un Sistema de Gestión de Inocuidad basado en los lineamientos de la FSSC 22000 para la línea de quinua blanca envasada de la empresa. Para llevar a cabo esta propuesta se realizó un diagnóstico del estado actual de la empresa en lo que respecta a temas de higiene e inocuidad, utilizando como herramienta la Lista de verificación de requisitos en base a la ISO 22000:2005 y la ISO/TS 22002-1:2009. Con el resultado de esta lista de verificación se aplicaron dos herramientas de calidad, las cuales fueron la Tormenta de ideas y la Matriz de selección de problemas. A partir de esto se identificó que los principales problemas a abordar son la Alta demanda internacional insatisfecha y la Inexistencia de un plan de inocuidad y su implementación en la línea productiva de quinua blanca envasada. Ambos problemas identificados sirvieron de base para el planteamiento de la propuesta de mejora “Elaboración de un Manual de Gestión de inocuidad basado en los lineamientos de la FSSC 22000 para la línea de Quinua Blanca envasada”, adicionalmente la adaptación y mejora del Plan HACCP de la empresa Agro Exportadora Andina S.A.C. Para llevar a cabo esta propuesta de mejora se emplearon como referencias las normas ISO 22000 (ISO, 2005) y la Especificación Técnica ISO/TS 22002-1 (ISO, 2009).
The present work has been developed in the company Agro Exportadora Andina S.A.C.,located in the district of Surco, Lima, that is dedicated to the heading of cereals and Andean sedes. This work took as a main purpose to improve and to reinforce the conditions of food safety under which the productive process of the organization has developing, and this way also to attend on the requirements of its clients. This result was obtained by the proposal of elaboration of a System of Management of Safety based on the guidelines of the FSSC 22000 for the production line of white quinoa packaged of the company. In order to carry out this proposal, a diagnosis was made of the current condition of the company in regards to hygiene and safety issues, using as a tool the Checklist of requirements based on ISO 22000: 2005 and ISO / TS 22002 -1: 2009. With the result of this checklist two quality tools were applied, which were the Brainstorming and Matrix Chart. From this it was identified that the main problems to be addressed are the High unsatisfied international demand and the Lack of a safety plan and its implementation in the production line of white quinoa packaged. Both problems identified served as a basis for the proposal for improvement "Elaboration of a Safety Management Manual based on the guidelines of FSSC 22000 for the lines of White Quinoa Packaged", in addition to the adaptation and improvement of the HACCP Plan of the company Agro Exportadora Andina S.A.C. In order to carry out this improvement proposal, the standards ISO 22000 (ISO, 2005) and Technical Specification ISO / TS 22002-1 (ISO, 2009) were used as references.
