Abstract
El presente trabajo de suficiencia profesional tuvo como objetivo describir y analizar las operaciones de almacenamiento de pota (Dosidicus gigas) congelada en cámaras frigoríficas y su despacho en la planta pesquera Ultra Frio S.A.C., ubicada en el Callao, la cual cuenta con tres cámaras de almacenamiento. En el desarrollo del tema, se analizaron las funciones que se realizan en el área de almacenamiento de productos terminados: proceso de recepción, almacenamiento, despacho y registro de producto terminado. Esto incluyó el control de la ubicación de los pallets por cliente, mediante la codificación de los productos. Además, se analizó el proceso del despacho del producto, con una preparación previa de los pedidos, con el fin de mejorar el servicio al cliente y reducir el tiempo en las entregas. También se controló la existencia de los productos en los inventarios, descargando la información de las guías de ingresos y salidas a las cámaras. Como resultado de evaluar la eficiencia de las operaciones y de la implementación de la codificación de productos y sistemas de inventario se mostraron una reducción significativa en los tiempos de entrega, una mejora en la satisfacción del cliente y una optimización del espacio del almacenamiento. Se concluyó que el sistema de codificación y la preparación previa de los pedidos son esenciales para optimizar el almacenamiento y despacho de productos congelados. Se recomienda la implementación de tecnologías avanzadas de seguimiento y monitoreo para continuar mejorando la eficiencia y reducir los tiempos de entrega.
The objective of this professional sufficiency work was to describe and analyze the storage operations of frozen squid (Dosidicus gigas) in cold rooms and its dispatch in the Ultra Frio S.A.C. fishing plant, located in Callao, which has three storage chambers. In the development of the topic, the functions that are performed in the area of storage of finished products were analyzed: process of reception, storage, dispatch and registration of finished product. This included controlling pallet location by customer, by coding products. In addition, the product dispatch process was analyzed, with prior preparation of orders, in order to improve customer service and reduce delivery time. The existence of the products in the inventories was also controlled, downloading the information from the entry and exit guides to the chambers. As a result of evaluating the efficiency of operations and the implementation of product coding and inventory systems, a significant reduction in delivery times, an improvement in customer satisfaction and an optimization of storage space were shown. It was concluded that the coding system and the prior preparation of orders are essential to optimize the storage and dispatch of frozen products. The implementation of advanced tracking and monitoring technologies is recommended to continue improving efficiency and reduce delivery times.
