Evaluación del cumplimiento de la norma iso 5555 en el muestreo de aceite de pescado en la Empresa - Pucusana

Abstract

El presente trabajo tuvo como objetivo la aplicación de la norma NTP - ISO 5555 en el muestreo de aceite refinado - concentrado de pescado en la Empresa Pucusana (Tecnológica de Alimentos S.A Omega) realizado por la certificadora SGS S.A.C. El inicio de las operaciones para el envasado de aceite refinado – concentrado de pescado, se verificó que el área del envasado se encuentre en condiciones óptimas de funcionamiento y limpieza, luego se procedió al llenado de los cilindros - IBC, a la mitad del lote se detuvo el llenado para realizar el muestreo, posteriormente se culminó con el llenado de los envases del lote; por otro lado, en la línea de ácidos grasos y estearina se utilizó un muestreador insertado en la línea de llenado, el cual posee un grifo con una válvula que permite la recolección de la muestra representativa durante el llenado de los flexitanques. Durante el año 2022, periodo en el que se realizó el análisis del muestreo de aceite refinado - concentrado aplicando el procedimiento de la empresa SGS S.A.C, se concluye que no se cumple con lo estipulado por la NTP- ISO 5555 para el muestreo de aceite refinado – concentrado de pescado en envases cilindro -IBC; motivo por el cual se propuso realizar tres tomas de muestras del tanque: una superior, otra intermedia y una última inferior para cumplir con la norma.The objective of this work was the application of the NTP - ISO 5555 standard in the sampling of refined oil - fish concentrate in the Pucusana Company (Tecnológica de Alimentos S.A Omega) carried out by the certifying agency SGS S.A.C. At the beginning of the operations for the packaging of refined oil - fish concentrate, it was verified that the packaging area was in optimal operating and cleaning conditions, then the cylinders were filled - IBC, halfway through the batch the filling was stopped to carry out the sampling, later it was completed with the filling of the containers of the batch; on the other hand, in the fatty acids and stearin line, a sampler inserted in the filling line was used, which has a tap with a valve that allows the collection of the representative sample during the filling of the flexitanks. During the year 2022, period in which the analysis of the refined oil - concentrate sampling was carried out applying the procedure of the company SGS S.A.C, it was concluded that the provisions of the NTP- ISO 5555 for the sampling of refined oil - fish concentrate in cylinder containers -IBC are not met; For this reason, it was proposed to take three samples from the tank: one from above, one from between, and one from below to comply with the standard.
