Abstract
En el presente estudio se evaluó el efecto de un extracto etanólico de ají panca (Capsicum chinense) sobre la estabilidad oxidativa proteica y lipídica en la carne molida cocida de cuy. El ají panca provino de Barranca el cual se secó, molió, tamizó (se trabajó con partículas menores de 850 µm - tamiz Tyler N° 20) y maceró con etanol para luego obtener le extracto etanólico de ají panca por lixiviación. Al extracto se le determinó el contenido de compuestos fenólicos por el método de Folin-Ciocalteu, capacidad antioxidante de la parte hidrofílica y lipofílica por el método ABTS+, carotenoides por β-caroteno y capsaicinoides por cromatografía líquida (HPLC). Luego, el extracto etanólico fue aplicado a la carne molida de cuy considerando la concentración de compuestos fenólicos en dosis de 100, 300 y 600 ppm, además se comparó con un antioxidante sintético (BHT a 200 ppm) y una muestra control sin antioxidante; posteriormente la carne con los tratamientos fue sometido a cocción. La carne molida cocida de cuy fue almacenada en refrigeración (4 °C), llevándose a cabo las siguientes mediciones: pH, color, oxidación de lípidos (TBARS), oxidación de proteína y perfil de textura (TPA), en los días 0, 3, 6 y 9 de almacenamiento. Los resultados obtenidos en los tratamientos establecidos aplicados a la carne de cuy molida cocida fueron analizados por la varianza mediante el ANOVA, encontrándose diferencias significativas (P < 0.05), permitiendo demostrar que el extracto etanólico de ají panca (Capsicum chinense) y su interacción con el tiempo de almacenamiento, tuvo un efecto positivo al favorecer en mantener el pH, disminuir la oxidación lipídica y proteica, preservar el color y cambios en el perfil de textura (disminuyó la dureza, elasticidad, cohesividad y masticabilidad, mientras que la adhesividad tuvo poca variación en el tiempo y tratamiento aplicado) que favoreció en la preservación.
In the present study, the effect of an ethanolic extract of panca chili pepper (Capsicum chinense) on the oxidative protein and lipid stability in the cooked ground meat of guinea pig was evaluated. The panca chili came from Barranca, which was dried, ground, sieved (we worked with particles smaller than 850 μm - Tyler Sieve No. 20) and macerated with ethanol to obtain the ethanol extract of panca chili by leaching. The extract was determined the content of phenolic compounds by the Folin-Ciocalteu method, antioxidant capacity of the hydrophilic and lipophilic part by the ABTS + method, carotenoids by β-carotene and capsaicinoids by liquid chromatography (HPLC). Then, the ethanolic extract was applied to ground guinea pig meat considering the concentration of phenolic compounds in doses of 100, 300 and 600 ppm, in addition it was compared with a synthetic antioxidant (BHT at 200 ppm) and a control sample without antioxidant; subsequently the meat with the treatments was subjected to cooking. The cooked ground meat of guinea pig was stored under refrigeration (4 ° C), taking the following measurements: pH, color, oxidation of lipids (TBARS), protein oxidation and texture profile (TPA), on days 0, 3, 6 and 9 of storage. The results obtained in the established treatments applied to the cooked ground guinea pig meat were analyzed by the ANOVA variance, finding significant differences (P < 0.05), that the ethanol extract of panca chili (Capsicum. chinense) and its interaction with storage time, had a positive effect by favoring maintaining pH, decreasing lipid and protein oxidation, preserving color and changes in texture profile (decreased hardness, elasticity, cohesiveness and chewiness, while adhesiveness had little variation in time and treatment applied) hat favored in the preservation.
