Abstract
El Trabajo de Suficiencia Profesional (TSP) examinó el proceso de elaboración de Shio Harami mediante la metodología de Lean Manufacturing, con el fin de detectar tiempos, desperdicios y cuellos de botella. Se concluyó que la fase de salado por inmersión era el principal obstáculo, ya que tomaba 16.5 seg/kg, por encima del Takt Time de 14.53 seg/kg. Mediante el diagrama de Ishikawa, se identificaron como causas raíz la ausencia de estandarización en la salmuera, el tiempo excesivo de inmersión y la manipulación superflua del producto. Además, el Value Stream Mapping (VSM) reveló que las tareas sin valor agregado ocupaban el 22.1% del tiempo completo del proceso. La solución propuesta consistió en adoptar el método de inyección para el salado, lo que bajó el tiempo de ciclo de 16.5 seg/kg a 8 seg/kg. De igual modo, se introdujo la metodología 5S para mejorar el orden y la disposición del espacio de trabajo, disminuyendo un 87,5% en uso de materiales y un flujo continuo. Como resultado la producción subió de 1200 kg a 1680 kg por turno, lo que representó un incremento del 40% en la productividad. En resumen, el estudio eliminó tiempos de ciclo innecesarios, suprimió desperdicios, elevó el desempeño del proceso y potenció la competitividad en el proceso de Shio Harami de trucha arcoíris.
The Professional Competency Project (PCP) examined the Shio Harami production process using Lean Manufacturing methodology to identify time, waste, and bottlenecks. It was concluded that the immersion salting phase was the main obstacle, taking 16.5 seconds/kg, exceeding the Takt Time of 14.53 seconds/kg. Using the Ishikawa diagram, the root causes were identified as a lack of brine standardization, excessive immersion time, and unnecessary product handling. Furthermore, Value Stream Mapping (VSM) revealed that non-value-added tasks accounted for 22.1% of the total process time. The proposed solution was to adopt the injection method for salting, which reduced the cycle time from 16.5 seconds/kg to 8 seconds/kg. Similarly, the 5S methodology was introduced to improve the order and layout of the workspace, reducing material usage by 87.5% and ensuring a continuous flow. As a result, production increased from 1200 kg to 1680 kg per shift, representing a 40% increase in productivity. In summary, the study eliminated unnecessary cycle times, reduced waste, improved process performance, and enhanced competitiveness in the Shio Harami rainbow trout processing.
