Abstract
El Perú es uno los principales exportadores de espárragos frescos en el mundo, gracias a que la agroindustria trabaja por mantener los más altos estándares de calidad e inocuidad, lo que permite la competitividad y una posición en el mercado internacional. Por ello, el objetivo de este trabajo es describir el control de calidad del espárrago fresco destinados a la exportación que se realiza en un terminal aeroportuario, así como la importancia de determinar los puntos críticos de control (PCC) para asegurar la inocuidad y calidad del producto durante el proceso de recepción, almacenamiento y despacho. De esta manera, se logra evidenciar lo importante que son los controles rigurosos de calidad en un terminal aeroportuario, ya que es el último punto de la cadena logística del espárrago fresco antes de que sea embarcado y enviado al mercado exterior, donde se puede detectar oportunamente desviaciones y observaciones permitiendo conservar las características físicas y organolépticas, prologando su vida útil y manteniendo su valor comercial. Además, permite minimizar pérdidas económicas ocasionadas por reclamos o rechazos en destino y lograr la satisfacción del cliente.
Peru is one of the world’s leading exporters of fresh asparagus, thanks to the agribusiness sector’s commitment to maintain the highest standards of quality and safety, which ensures competitiveness and a strong position in the international market. The objective of this work is to describe the quality control of fresh asparagus intended for export that is carried out at an airport terminal, as well as the importance of identifying critical control points (CCPs) to ensure product safety and quality during the reception, storage, and dispatch process. In this way, it is demonstrated that rigorous quality controls in the airport terminal are essential, as it is the final point in the fresh asparagus logistics chain before the product is loaded and shipped to foreign markets. Here, deviations and issues can be detected in a timely manner, allowing for the preservation of physical and organoleptic characteristics, extending shelf life, and maintaining commercial value. Furthermore, this approach minimizes economic losses caused by claims or rejections at the destination and ensures customer satisfaction.
