Abstract
This monograph presents the experience accumulated over 11 years in ginger (kion) cultivation in the province of Satipo, focusing on agronomic management and the post-harvest process under compliance with USDA-NOP, EU, and RTPO organic regulations. These regulations establish strict guidelines that must be rigorously applied during all stages of the production process, from cultivation to export. Compliance with these regulations is a fundamental aspect of organic ginger production, both in the agronomic management phases and in post-harvest practices. This paper describes in detail each of these stages, which must be implemented by producing and exporting companies, as well as by the supplier farmers who make up the value chain. Currently, international markets increasingly value agricultural products that guarantee healthy nutrition, are free of chemical residues, and are produced with a focus on environmental sustainability. In this context, producers and organizations dedicated to organic ginger cultivation in Peru strictly comply with the required requirements, which has positioned the country as a growing player in the export market. This growth not only responds to high international demand but also contributes to the economic and social development of producing communities, generating employment and strengthening the local economy in the province of Satipo.
