Abstract
La acuicultura se ha consolidado como uno de los sectores productivos de mayor crecimiento a nivel mundial, superando por primera vez a la pesca de captura, en la provisión de animales acuáticos para consumo humano. En el Perú, el cultivo de la especie Oncorhynchus mykiss “trucha arcoíris” representa una de las principales actividades acuícolas en las zonas altoandinas, contribuyendo significativamente en la alimentación, al desarrollo económico local y en la generación de empleo. Sin embargo, el incremento de la producción plantea desafíos relacionados con la sostenibilidad ambiental, la gestión sanitaria y la responsabilidad social. En este contexto, las certificaciones internacionales de acuicultura sostenible, como la del Aquaculture Stewardship Council (ASC), constituyen herramientas clave para promover buenas prácticas productivas y garantizar el acceso a mercados internacionales exigentes. El presente Trabajo de Suficiencia Profesional tiene como objetivo evaluar los procesos de auditoría realizados a empresas acuícolas bajo la norma ASC Freshwater Trout versión 1.2 en el Perú durante el periodo 2020–2024. La metodología se basó en el análisis de los procesos de auditoría y la revisión de las no conformidades identificadas durante las evaluaciones realizadas por organismos de certificación acreditados. Los resultados permitieron identificar las principales no conformidades asociadas al cumplimiento de los requisitos ambientales, sociales y de gestión establecidos por el estándar ASC, así como verificar la correcta aplicación de los lineamientos del proceso de certificación. Se concluye que la implementación del estándar ASC contribuye a fortalecer la sostenibilidad de la truchicultura peruana, promoviendo la mejora continua de las prácticas productivas y reforzando la competitividad del sector acuícola en mercados internacionales.
Aquaculture has become one of the fastest-growing food production sectors worldwide, surpassing capture fisheries for the first time in the supply of aquatic animals for human consumption. In Peru, the cultivation of the species Oncorhynchus mykiss “rainbow trout” represents one of the main aquaculture activities in the high Andean areas, contributing significantly to food, local economic development and job creation. However, the increase in production has also generated challenges related to environmental sustainability, sanitary management, and social responsibility. In this context, international sustainable aquaculture certifications, such as those established by the Aquaculture Stewardship Council (ASC), play a key role in promoting responsible production practices and facilitating access to demanding international markets. The objective of this Professional Sufficiency Work is to evaluate the audit processes conducted in aquaculture companies under the ASC Freshwater Trout Standard version 1.2 in Peru during the period 2020–2024. The methodology consisted of analyzing audit processes and reviewing the non-conformities identified during evaluations carried out by accredited certification bodies. The results allowed the identification of the main non-conformities related to compliance with environmental, social, and management requirements established by the ASC standard, as well as verifying the correct application of certification and accreditation procedures. It is concluded that the implementation of the ASC standard strengthens the sustainability of the Peruvian trout farming sector, promoting continuous improvement in production practices and enhancing the competitiveness of the aquaculture industry in international markets.
