Abstract
El presente trabajo se encuentra enfocado en el desarrollo de la experiencia profesional aplicada al sector pesquero desempeñado para la empresa Grupo FS S.A.C, en la cual se ejerce el puesto de Consultor de Asuntos regulatorios del Área de alimentos. Teniendo como principales funciones: Revisión y recopilación de información en cumplimiento de las normativas legales del país, Gestión de registros sanitarios ante la entidad correspondiente, Validación de rotulados y su adecuación en base a los criterios normativos aplicables y en cumplimiento de lineamientos establecidos por los principales retails a nivel nacional, Desarrollo de tablas nutricionales, Evaluación y propuesta de las distintas declaraciones nutricionales según sea correspondiente, así como el constante asesoramiento técnico a los clientes, teniendo a DIGESA, SANIPES e INDECOPI como principales instituciones regulatorias en los servicios prestados. Para fines del presente objetivo se desarrolló un Check list de evaluación y adecuación del etiquetado de productos pesqueros acorde a la normativa peruana, dentro de las cuales destacan el DS 040 2001 PE – Norma Sanitaria para las actividades Pesqueras y acuícolas, Codex 1 – 1985 - Norma general para el etiquetado de los alimentos preenvasados, Codex 2 – 1995 Directrices sobre etiquetado nutricional, Codex 23 – 1997 Directrices para el uso de declaraciones nutricionales y saludables y el DS 020 2022 PRODUCE – Decreto supremo, con la finalidad de establecer lineamientos claros en torno a la validación de rotulados permitiendo así una mejora continua del proceso. La metodología utilizada se desarrolló en 2 etapas: La primera de recopilación de información, para lo cual se realizaron entrevistas, revisión documentaria, entre otros y la segunda de evaluación y validación para lo cual fue requerido utilizar las bases normativas aplicables y el check list desarrollado.
This work is focused on the development of professional experience applied to the fishing sector carried out for the company Grupo FS S.A.C, in which the position of Regulatory Affairs Consultant for the Food Area is held. Having as its main functions: Review and compilation of information in compliance with the legal regulations of the country, Management of health records before the corresponding entity, Validation of labels and their adaptation based on the applicable regulatory criteria and in compliance with guidelines established by the main retails at a national level, Development of nutritional tables, Evaluation and proposal of the different nutritional declarations as appropriate, as well as constant technical advice to clients, having DIGESA, SANIPES and INDECOPI as the main regulatory institutions in the services provided. For the purposes of this objective, a Check list was developed to evaluate and adapt the labeling of fishing products according to Peruvian regulations, among which DS 040 2001 PE – Sanitary Standard for Fishing and Aquaculture Activities, Codex 1 – 1985 – stands out. General standard for the labeling of prepackaged foods, Codex 2 – 1995 Guidelines on nutritional labeling, Codex 23 – 1997 Guidelines for the use of nutritional and health claims and DS 020 2022 PRODUCE – Supreme Decree, with the purpose of establishing clear guidelines in around the validation of labels, thus allowing continuous improvement of the process. The methodology used was developed in 2 stages: The first of information collection, for which interviews, documentary review, among others, were carried out, and the second of evaluation and validation for which it was required to use the applicable normative bases and the developed check list.
