Abstract
El presente trabajo tuvo como objetivo presentar la experiencia adquirida en el manejo de la cadena de frío para la conservación de productos agrícolas durante el año 2025. Para ello se describeen procesos operativos de recepción, almacenamiento, manipulación y despacho de carga perecedera, así como las condiciones de control de temperatura durante las diferentes etapas operativas. Se presenta el seguimiento de temperaturas de las cámaras a través del sistema Xsense y el control de temperaturas durante las operaciones de manipulación de espárragos, mango y productos hidrobiológicos. Asimismo, se revisó el cumplimiento de los procedimientos operativos aplicables y se identificaron los principales puntos críticos de control asociados a la continuidad de la cadena de frío. Se demuestra la importancia de que las cámaras de almacenamiento mantengan temperaturas óptimas para la conservación de productos perecederos. Se concluye que la aplicación de procedimientos operativos, monitoreo constante de temperaturas, utilización de ambientes refrigerados y uso de mantas térmicas permiten mantener la continuidad de la cadena de frío durante el manejo de productos perecederos.
The objective of this study was to report the experience acquired in the cold chain management for the preservation of agricultural products. It is reported the operational processes for receiving, storing, handling, and dispatching perishable cargo, as well as the temperature control conditions during the various operational stages. The evaluation included monitoring chamber temperatures via the Xsense system and controlling temperatures during the handling of asparagus, mangoes, and sea foods products. Additionally, compliance with applicable operating procedures was reviewed, and the main critical control points associated with maintaining the cold chain were identified. It is reported the importance that the storage chambers maintain optimal temperatures for the preservation of perishable products within optimal ranges. It is concluded that the application of operating procedures, constant temperature monitoring, the use of refrigerated environments, and the use of thermal blankets allowed the maintenance of the cold chain in handling perishable products.
