Efecto del método de extracción en las características fisicoquímicas y funcionales de almidón de cañihua (Chenopodium pallidicaule Aellen)

La cañihua es un pseudocereal nativo del altiplano andino que, aún con iguales o mejores propiedades nutricionales y funcionales que la quinua o el amaranto, ha recibido poca atención. Además de sobresalir por su contenido y calidad proteica, la cañihua también posee un alto contenido de almidón, distinguiéndose de las fuentes comerciales por su tamaño de gránulo muy pequeño (0,5 – 1,5 µm) que le confiere propiedades singulares. Para poder estudiar la potencial funcionalidad del almidón de cañihua, es necesario seleccionar un método de extracción, que además de presentar alto rendimiento y pureza, no altere sus propiedades funcionales. Por el alto contenido de proteínas, grasa y fibra en este grano, se recomienda métodos de extracción con solventes alcalinos, no obstante, no se sabe el efecto que puedan producir en sus propiedades funcionales. Por lo mencionado, la presente investigación tuvo como objetivo estudiar el efecto de tres métodos de extracción de almidón de cañihua de la variedad Illpa INIA en el rendimiento, pureza y en sus propiedades físicoquímicas y funcionales: a) M1: bajo remojo acuoso/12 h con posteriores lavados con solución NAOH al 0,25 por ciento, b) M2: remojo en solución NaOH al 0,25 por ciento/12 h con posteriores lavados con agua y c) M3: extracción bajo remojo acuoso/12h con posteriores lavados con agua, en comparación con el almidón de maíz (control). Los resultados obtenidos fueron analizados estadísticamente utilizando el diseño completamente al azar (DCA) y posteriormente una comparación de medias utilizando la prueba LSD Tukey. Los métodos alcalinos (M1 y M2) presentaron altos rendimientos comparados con el método acuoso. El tratamiento M1 obtuvo el mayor rendimiento (37,06 por ciento), seguido de M2 (35,34 por ciento) y M3 (26,39 por ciento). Los almidones de cañihua obtenidos bajo los tres métodos de extracción presentaron bajo contenido de grasa (0 – 0,20 por ciento), proteína (0,78 – 1,56 por ciento), fibra cruda (0 – 0,02 por ciento), amilosa (10,54 – 15,60 por ciento) y altos valores de luminosidad e índice de blancura, lo que indicó el alto grado de pureza. El tratamiento con mayor exposición al medio alcalino (M2) produjo cambios en la mayoría de las propiedades funcionales, presentando menor solubilidad a 95 °C (12,9; 11,2 y 12,2 por ciento para M1, M2 y M3, respectivamente), menor poder de hinchamiento (13,8; 11,8 y 13,3 por ciento para M1, M2 y M3, respectivamente), mayor sinéresis en refrigeración (8,9; 21,3 y 9,5 por ciento para M1, M2 y M3, respectivamente). En sus propiedades de formación de pasta presentó menor viscosidad pico, mínima, final y mayor setback. Sus geles presentaron un comportamiento no newtoniano, tipo pseudoplastico y fueron más duros. Los tres tratamientos no mostraron diferencias significativas en sus propiedades térmicas (Tp, To, Tc y ΔH de gelatinización). Los resultados demostraron que una exposición prolongada a medios alcalinos produce cambios importantes en las propiedades funcionales del almidón que afectarían su potencial uso agroindustrial. Finalmente, el almidón de cañihua resaltó con respecto al almidón de maíz, por su menor contenido de amilosa, menor claridad, mayor blancura, menor sinéresis, menores temperaturas y energía de gelatinización, mayor viscosidad máxima y menor tendencia a la retrogradación, menor dureza lo que lo distingue como una fuente potencial con propiedades singulares.; Cañihua is a pseudocereal native to the Andean highlands that, even with equal or better nutritional and functional properties than quinoa or amaranth, has received little attention. In addition to standing out for its protein content and quality, cañihua also has a high starch content, distinguishing itself from commercial sources due to its very small granule size (0,5 – 1,5 µm), which gives it unique properties. In order to study the potential functionality of cañihua starch, it is necessary to select an extraction method that, in addition to presenting high yield and purity, does not alter its functional properties. Due to the high content of protein, fat and fiber in this grain, extraction methods with alkaline solvents are recommended; however, the effect they may produce on its functional properties is not known. Due to the aforementioned, the objective of this research was to study the effect of three extraction methods of cañihua starch of the Illpa INIA variety on yield, purity, and its physical-chemical and functional properties: a) M1: under aqueous soaking/ 12 h with subsequent washings with 0,25 percent NAOH solution, b) M2: soaking in 0,25 percent NaOH solution/12h with subsequent washings with water and c) M3: extraction under aqueous soaking/12h with subsequent washings with water, compared to cornstarch (control). The results obtained were statistically analyzed using the completely randomized design (DCA) and later a comparison of means using the LSD Tukey test. The alkaline methods (M1 and M2) presented high yields compared to the aqueous method. Treatment M1 obtained the highest yield (37,06 percent), followed by M2 (35,34 percent) and M3 (26,39 percent). The cañihua starches obtained under the three extraction methods presented low content of fat (0 – 0,20 percent), protein (0,78 – 1,56 percent), crude fiber (0 – 0,02 percent), amylose (10,54 – 15,60 percent) and high values of luminosity and whiteness index, which indicated the high degree of purity. The treatment with greater exposure to the alkaline medium (M2) produced changes in most of the functional properties, presenting lower solubility at 95 °C (12,9; 11,2 and 12,2 percent for M1, M2 and M3, respectively), lower swelling power (13,8; 11,8 and 13.3 percent for M1, M2 and M3, respectively), greater syneresis in refrigeration (8,9; 21,3 and 9,5 percent for M1, M2 and M3, respectively). In its paste formation properties, it presented lower peak, minimum, and final viscosity and higher setback. Their gels presented a non-Newtonian, pseudoplastic type behavior and were harder. The three treatments did not show significant differences in their thermal properties (Tp, To, Tc and ΔH of gelatinization). The results showed that prolonged exposure to alkaline media produces important changes in the functional properties of starch that would affect its potential agro-industrial use. Finally, cañihua starch stood out with respect to corn starch, due to its lower amylose content, less clarity, greater whiteness, less syneresis, lower temperatures and gelatinization energy, higher maximum viscosity and less tendency to retrogradation, lower hardness lo that distinguishes it as a potential source with unique properties. The results show that prolonged exposure to alkaline media produces important changes in the functional properties of starch that would affect its potential agro-industrial use. Capparis scabrida Kunth (Capparaceae) es una especie perteneciente a la flora de los bosques secos del Norte del Perú, Centro y Sur del Ecuador, conocida con el nombre de Sapote y empleada principalmente como recurso forestal, que en la actualidad está considerada en peligro crítico de extinción. Algunos estudios señalan a la goma procedente de su corteza como una alternativa de uso industrial, no obstante, no hay un estudio a profundidad de su potencialidad y viabilidad de sus aplicaciones. Por consiguiente, el objetivo de esta investigación fue caracterizar y evaluar las propiedades tecno-funcionales de la goma del árbol de Sapote (GS) y compararlas con la goma Arábiga (GA), de amplio uso en la industria alimentaria. Para lo cual el mucílago fue purificado mediante: dilución, centrifugado-filtrado, secado y molienda. Se realizó una caracterización mediante un análisis proximal, prueba de solubilidad a 30, 60 y 90°C, caracterización mediante espectroscopía infrarroja por transformada de Fourier (FTIR), observación de su comportamiento reológico de flujo y prueba de viscosidad intrínseca; para luego evaluar sus propiedades tecno-funcionales como su capacidad gelificante, espumantes y emulsificantes. Los resultados obtenidos señalan que la GS presenta una solubilidad en agua a 30, 60 y 90°C de 86.1, 94.6, y 90.9 por ciento respectivamente sin diferencia significativa (p<0,05) en comparación con la GA, sin embargo, posee una mayor viscosidad intrínseca (0.0432 L/g) que la GA (0.0209 L/g). El modelo Ostwald-de-Waele fue utilizado para la caracterización reológica de la GS, presentando índices de consistencia superiores a GA, y un comportamiento pseudoplástico (n<1). La GS presentó mejor capacidad y estabilidad espumante que la GA en concentraciones hasta 10 por ciento, además de ser óptima a 70°C y pH 7, lo que aumentó con la concentración de sal. La GS también presentó mayor estabilidad de la emulsión que la GA en concentraciones de hasta 10 por ciento, con valores óptimos a pH7 y 70°C, estabilidad no varió con la adición de sales. Su potencialidad entonces incluye el uso de la goma como agente espumante, emulsificante y estabilizador.; Capparis scabrida Kunth (Capparaceae) is a species belonging to the flora of the dry forests of Northern Peru, and Central and Southern Ecuador, mainly used as a forest resource and which is currently considered to be in critical danger of extinction. It is necessary to study other possibilities of using this resource, to encourage its protection. Previous exploratory studies point to the gum from its bark as an alternative for industrial use, however there is no in-depth study of its potential that demonstrates the viability of its applications. Since gums have a huge industrial field of application and considerable volumes are imported in the country, it is interesting to find other sources that may be an alternative solution. Therefore, the objective of this research was to characterize and evaluate the techno-functional properties of the gum from the Sapote tree (GS) and compare them with gum Arabic (GA), widely used in the food industry. The exudate was purified by dilution, centrifugation-filtering, drying at 40 °C and milling to obtain the gum. The characterization included: compound analysis, solubility test at 30, 60 and 90 °C, FTIR characterization, rheological characterization, and intrinsic viscosity, while the techno-functional properties evaluated were gelling capacity, foaming capacity and stability and emulsifying properties. The results obtained indicate that the GS has a solubility in water at 30, 60 and 90 °C of 86.1, 94.6, and 90.9% respectively without significant difference (p <0.05) compared to the GA and has a higher viscosity intrinsic (0.0432 L/g) than GA (0.0209 L/g). The Ostwald-de-Waele model was used for the rheological characterization of GS, presenting consistency indices higher than GA, and a pseudoplastic behavior. The GS presented better foaming capacity and stability than the GA at concentrations of 1, 3, 5, 7 and 10%, in addition to being optimal at 70 °C and pH7, increasing with the salt concentration. The emulsifying activity and stability were evaluated by turbidity, and cream index presenting greater stability than the GA at concentrations of 1, 2.5, 5, 7.5 and 10%, having optimal values at pH7 and 70 °C, being stable at the addition of NaCl. Its potential relies on being a substitute of gum Arabic as a thickening agent, foaming agent, emulsifier, and stabilizer.

La operación unitaria de tostado es parte del procesamiento postcosecha del cacao, el cual se realiza a altas temperaturas en la industria en general. El objetivo de este estudio fue determinar el efecto del tostado (70 y 80 °C) al vacío (20 kPa) sobre la acidez titulable, pH, capacidad antioxidante, porcentaje de humedad y color e índice de blancura de los granos de cacao genotipo Chuncho, y a su vez, comparar estos tratamientos con el tostado a presión atmosférica (100 kPa) y a las mismas temperaturas. Se determinó estadísticamente que las presiones y temperaturas ensayadas si tienen efecto significativo (p<0,05) sobre la acidez titulable y el porcentaje de humedad. Sin embargo, en el pH y capacidad antioxidante, no ejercen efecto significativo (p<0,05). En el caso del índice blancura, solo la temperatura ejerce efecto significativo (p<0,05). Finalmente, se recomienda realizar más investigaciones usando el tostado al vacío con otras temperaturas y presiones e incluyendo otras varias variables como tiempo, tipo de tostador e índice de fermentación.; The roasting unit operation is part of the post-harvest processing of cocoa, which is carried out at high temperautres in the industry in general. This research aims to determine the effect of roasting (70 and 80 °C) under vacuum (20 kPa) on the titratable acidity, pH, antioxidant capacity, percentage of moisture and color and whiteness index of Chuncho genotype cocoa beans, and then, compare these treatments with roasting at atmospheric pressure (100 kPa) and at the same temperatures. It was statistically determined that the pressures and temperatures tested do have a significant effect (p<0.05) on the titratable acidity and the moisture percentage. However, on the pH and antioxidant capacity, they do not have a significant effect (p<0.05). In the case of the whiteness index, only temperature exerts a significant effect (p<0.05). Finally, further research is recommended using vacuum roasting at other temperatures and pressures and including various other variables such as time, roaster type, and fermentation rate.

Una emulsión es un sistema coloidal, producto de la homogenización de dos fases líquidas inmiscibles; una de estas fases se encuentra dispersa en la otra, en forma de pequeñas gotas esféricas y cuya estabilidad es lograda por la incorporación de agentes tensoactivos. En los últimos años el uso de partículas de origen vegetal como estabilizante de emulsiones ha atraído mucho interés debido a la baja toxicidad, alta estabilidad y biodegradabilidad, con respecto a los agentes tensoactivos. A estas emulsiones se les llama pickering y se caracterizan por la adsorción de partículas en la interfase que idealmente retardan y previenen la coalescencia y separación de fases en la emulsión. Almidones de diversas FUENTEs han sido estudiados como alternativas por sus ventajas comparativas, identificándose dos propiedades ideales para esta aplicación: el tamaño de los gránulos y su hidrofobicidad. Aunque los almidones nativos no son hidrofóbicos, esta se puede incorporar mediante modificaciones químicas, como la esterificación con ácido cítrico. Investigaciones destacan en el grano cañihua interesantes propiedades que lo hace adecuado para esta aplicación entre ellas: el alto contenido de almidón, el tamaño muy pequeño y rango estrecho de sus gránulos. Por lo tanto, los objetivos planteados en la presente investigación fueron: caracterizar fisicoquímicamente y funcionalmente el almidón nativo de cañihua (AN) y modificado por esterificación con ácido cítrico al 10% y 20% (AC10 y AC20) y evaluar el efecto estabilizante de éstos en emulsiones (aceite/agua: 30/70) elaboradas a partir de ellas (EAN, EAC10 y EAC20) bajo una concentración de 200 mg almidón/mL aceite. El almidón de cañihua (AN) fue extraído por el método húmedo con lavados con solución alcalina de NAOH al 0,25% obteniéndose un rendimiento de 37,76%, presentó una alta pureza por el bajo contenido de proteína (0,69%), lípido y fibra no detectados, alta luminosidad (95,77%) e índice de blancura (96,46%). El contenido de amilosa fue 14,94%. En el grado de sustitución, AC20 (0,125) fue significativamente (p<0.05) mayor a AC10 (0,065). AN tuvo altos valores en el poder de hinchamiento y solubilidad, reduciéndose significativamente en los almidones modificados. Los tratamientos AC10 y AC20 no exhibieron temperaturas de gelatinización, a diferencia de AN. La transmitancia del gel de AN fue baja y no varió de manera significativa (p>0.05) desde el día 1 (1.5-1.3) presentándose como un gel opaco. La sinéresis en refrigeración del gel de AN aumentó de manera significativa (p<0.05) (de 1,90 a 5,81%). El gel de AN presentó un comportamiento de flujo no newtoniano de naturaleza pseudoplástica. En la caracterización de las emulsiones pickering se observó que la modificación mejora la funcionalidad emulsionante. Existen diferencias significativas
(p<0.05) entre los tratamientos, EAN presentó el tamaño de gota más alto (D 4,3), disminuyendo con el tiempo (de 353,98 a 294,28 μm), contrariamente a EAC10 (de 47,89 a 57,56 μm) y EAC20 (de 92,03 a 111,77 μm). En el índice de emulsificación (IE), todas las emulsiones presentaron disminución, teniendo EAN el menor IE hasta el día 14 (39,93%), seguido de EAC20 (49,58%) y EAC10 (63,51%). En las propiedades viscoelásticas, EAC10 presentó aumento de G’ con el tiempo (más rigidez). Se evidenció que AC10 mostró mejores resultados en la estabilidad física, pudiéndose aplicar como estabilizador de emulsiones pickering en diversas industrias.; An emulsion is a colloidal system, product of the homogenization of two immiscible liquid phases; one of these phases is dispersed in the other, in the form of small spherical droplets whose stability is achieved by the incorporation of surface-active agents. In recent years, the use of particles of plant origin has attracted much interest as stabilizer due to their low toxicity, high stability and biodegradability compared to surface-active agents. These emulsions are called pickering and are characterized by the adsorption of particles at the interface that ideally retard and prevent coalescence and phase separation in the emulsion. Starches from various sources have been studied as alternatives due to their comparative advantages, identifying two ideal properties for this application: the size of the granules and their hydrophobicity. Although native starches are not hydrophobic, this can be incorporated through chemical modifications, such as esterification with citric acid. Research highlights interesting properties in the cañihua grain that make it suitable for this application, among them: the high content of starch, the very small size and the narrow range of its granules. Therefore, the objectives of the present investigation were: to characterize physicochemically and functionally the native starch of cañihua (AN) and modified by esterification with citric acid at 10% and 20% (AC10 and AC20) and to evaluate the stabilizing effect of these in emulsions (oil/water: 30/70) made from them (EAN, EAC10 and EAC20) under a concentration of 200 mg starch/ml oil. The cañihua starch (AN) was extracted by the wet method with washings with an alkaline solution of NAOH at 0,25%, obtaining a yield of 37,76%, it presented a high purity due to the low content of protein (0,69%), lipid and fiber not detected., high luminosity (95,77%) and whiteness index (96,46%). Amylose content was 14,94%. In the degree of substitution, AC20 (0,125) was significantly (p<0.05) higher than AC10 (0,065). AN had high values in swelling power and solubility, being significantly reduced in modified starches. AC10 and AC20 treatments did not exhibit gelatinization temperatures, unlike AN. The AN gel transmittance was low and did not vary significantly (p>0.05) from day 1 (1,5-1,3) presenting as an opaque gel. The cooling syneresis of the AN gel increased significantly (p<0.05) (from 1,90 to 5,81%). The AN gel exhibited non-newtonian flow behavior of a pseudoplastic nature. In the characterization of the pickering emulsions, it was observed that the modification improves the emulsifying functionality. There are significant differences (p<0.05) between the treatments, EAN presented the highest droplet size (D 4,3), decreasing with time (from 353,98 to 294,28 μm), contrary to EAC10 (from 47,89 to 57,56 μm) and EAC20 (from 92,03
to 111,77 μm). In the emulsification index (IE), all emulsions showed a decrease, with EAN having the lowest IE up to day 14 (39,93%), followed by EAC20 (49,58%) and EAC10 (63,51%). In the viscoelastic properties, EAC10 presented an increase in G' over time (more stiffness). It was evidenced that AC10 showed better results in physical stability, being able to be applied as pickering emulsion stabilizer in various industries.
